Recipe

I figured since I am doing this pantry challenge that I would post some of my favorite recipes this month. We have a routine here of having pizza every Friday night. I try and vary the kind of pizza I make. Some of the different kinds we make are Taco(with homemade re fried beans, ground pork sausage, lettuce, tomato and crunched up taco chips), chicken bacon ranch(ranch sauce, mozzarella cheese, bacon bits and chicken and some basil), Hawaiian, bbq chicken and cheeseburger pizza(sauce of bbq sauce, ketchup and mustard mixed together with hamburger, bacon, lettuce and pickles). My friend gave me her pizza dough recipe last year and I really LOVE it! It makes four crusts at a time, so I use one and freeze the others. I take one out of the freezer every Thursday night and it makes for a super easy Friday night supper! Here is the recipe for anyone interested:

Pizza Dough
4 cups lukewarm water
1 pkg dry yeast
2 cups flour
2 tsp salt
2 T olive oil

mix and let stand 5 mins. Slowly add additional flour and keep mixing until dough is rubbery and does not stick to hands. Let rise 2 hours.

I usually use half regular flour and half wheat flour. I bake it for 5 mins at 425 degrees and then add toppings and bake an additional 8 or 9 mins.

Last night we mixed it up and made personal pizzas. Tate helped me add the toppings:
