I finally found a good granola recipe! I have been looking for one for awhile, but they all seemed to have things that I don't normally have on hand. I made it this morning and have already had some. It is delicious and will last awhile. Here is the recipe:
12 cups quick cooking oats
1/2 cup flour
1 TBS ground cinnamon... See More
1/2 tsp ground nutmeg
4 cups "goodies"(nuts, raisins, sunflower seeds, trail mix, dried fruit)
1 cup vegetable oil
1 cup honey
Preheat oven to 325. Grease 3 large cookie sheets with cooking spray.
In a very large bowl combine oats, flour, cinnamon, nutmeg and whatever goodies you are using. Mix well.
Combine oil and honey in a 2 cup glass measuring cup and microwave on high 2 mins. Pour over dry ingredients and mix well. Spread mix over baking sheets, bake until light to med brown 15 to 20 mins. (Bake each sheet individually). Let granola cool. Transfer to storage container for up to 4 weeks. I doubt it'll last four weeks at my house!!!
I used chopped pecans, raisins, sunflower seeds and flax seeds in mine. I got the recipe from this book which I picked up at the library. It has lots of useful tips for saving money and creative recipes for things you might need but don't have on hand.
I'm doing well with the pantry challenge, despite my kids sudden need to eat every hour. I'm finding empty cracker boxes in the toy room from them going to the pantry and grabbing a snack on their own. I did go to the store yesterday and buy some stuff, b/c it was too good a deal to pass up. I have meals planned through the end of the month with our pantry stuff.
